Panner corn salad

Ingredients

  • Paneer: 100g, diced into small cubes
  • Sweet corn: 1 cup, boiled
  • Bell peppers (any color): ½ cup, diced
  • Cucumber: ½ cup, diced
  • Tomatoes: ½ cup, diced (seeds removed)
  • Lettuce leaves: 4-5, roughly torn (optional)
  • Lemon juice: 1 tbsp
  • Olive oil: 1 tbsp
  • Black pepper powder: ½ tsp
  • Red chili flakes: ½ tsp (optional)
  • Salt: to taste
  • Fresh coriander or parsley: 2 tbsp, chopped

Preparation

In a large bowl, combine boiled sweet corn, paneer cubes, diced bell peppers, cucumber, and tomatoes.

Add torn lettuce leaves if using.

In a small bowl, whisk together lemon juice, olive oil, black pepper, red chili flakes (if desired), and salt to prepare the dressing.

Pour the dressing over the salad and toss gently to combine all ingredients.

Garnish with fresh coriander or parsley and serve immediately.

Servings: Serves 2

Notes

  • To enhance flavor, lightly grill or sauté the paneer cubes in a non-stick pan before adding them to the salad.
  • Adjust spices and seasonings to your taste.
  • For added crunch, sprinkle roasted seeds (like sunflower or pumpkin seeds) or nuts (like almonds or walnuts) before serving.
  • Use hung curd instead of olive oil for a creamy dressing option.
